Ingredients:
  • 1 can artichoke hearts or bottoms
  • 1 cup parsley
  • 1/2 cup toasted walnuts
  • zest and juice of one lemon
  • 2 cloves garlic
  • salt and pepper
  • 1/2 cup extra virgin olive oil
  • Instructions:
  • Put in food processor and blend into pesto.
  • Spread over toast.
