Baby Bok Choy in Chinese Sauce

Ingredients:
  • 5 bunches baby Bok Choy, rinsed, patted dry, and cut in half lengthwise
  • peanut oil for frying
  • Sauce Ingredients:
  • 3/4 cup vegetable broth
  • 1 1/2 TBS vegetarian oyster sauce
  • 1 TBS soy sauce
  • 1 TBS sherry or dry white wine
  • 1 tsp sugar
  • 1 clove garlic minced
  • 1/2 tsp minced ginger
  • 1/2 tsp sesame oil
  • 1 TBS cornstarch
  • Instructions:
  • Combine ingredients in a bowl and mix well.
  • Heat a wok and add peanut oil (about 2-3 TBS) then add the bok choy and stir fry until it begins to caramelize and wilt. Add the sauce and stir fry until it bubbles and thickens. Serve immediately
