Spicy Bean Hot Pot

Ingredients:
  • 3 cups mushrooms
  • 1 TBS oil
  • 1 onion, sliced
  • 1 garlic clove, crushed
  • 1 TBS red wine vinegar
  • 14 oz. can chopped tomatoes
  • 1 TBS tomato paste
  • 1 TBS Worcestershire sauce
  • 1 TBS whole grain mustard
  • 1 TBS brown sugar
  • 1 cup vegetable broth
  • 1 - 14 oz can red kidney beans, drained
  • 1 – 14 oz can cannellini beans, drained
  • 1 bay leaf
  • 1/2 cup raisins
  • salt and black pepper
  • chopped parsley to garnish
  • Ingredients:
    1. Slice mushrooms. Set them aside. Heat oil in a large pan, add onions and garlic and cook over gentle (medium high) heat for 10 minutes until soft.
    2. Add all remaining ingredients except mushrooms and seasonings. Bring to a boil, lower heat and simmer 10 minutes.
    3. Add mushrooms and simmer for 5 minutes more. Add salt and pepper to taste.
    4. Transfer to warm plates and garnish with parsley.
