Spicy Bean Hot Pot
Ingredients: 3 cups mushrooms 1 TBS oil 1 onion, sliced 1 garlic clove, crushed 1 TBS red wine vinegar 14 oz. can chopped tomatoes 1 TBS tomato paste 1 TBS Worcestershire sauce 1 TBS whole grain mustard 1 TBS brown sugar 1 cup vegetable broth 1 - 14 oz can red kidney beans, drained 1 – 14 oz can cannellini beans, drained 1 bay leaf 1/2 cup raisins salt and black pepper chopped parsley to garnish Ingredients:
- Slice mushrooms. Set them aside. Heat oil in a large pan, add onions and garlic and cook over gentle (medium high) heat for 10 minutes until soft.
- Add all remaining ingredients except mushrooms and seasonings. Bring to a boil, lower heat and simmer 10 minutes.
- Add mushrooms and simmer for 5 minutes more. Add salt and pepper to taste.
- Transfer to warm plates and garnish with parsley.
