Dick's Insanely Hot Salsa

You can make a milder version of this by leaving out the chili peppers- maybe use one instead of 4 or 6. This is based on the Maui Tacos salsa from their cookbook, changed slightly. If you want this great salsa without the fuss, visit Maui Tacos.

Ingredients:
  • 2 TBS vegetable oil
  • 2 cloves garlic
  • 4-6 hot dried chili peppers (remove the seeds and stems)
  • 1/2 Maui onion (about 1/2 cup cut into quarters)
  • 1 small tomatillo (quartered)
  • 2 vine ripened tomatoes (about a cup, cut into quarters)
  • 1/2 cup water
  • juice of 1/2 lime
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 TBS fresh cilantro
  • Instructions:
    1. In a small pan, heat the vegetable oil over medium high heat. Cook the garlic and chili peppers until the peppers turn brown. Set aside to cool.
    2. In another small pan, simmer the water, onion, tomatillo, and tomato for 8 – 10 minutes until softened.
    3. Place the chili peppers and garlic with the oil in a food processor. Add the cooled water, tomato, tomatillo, and onion.
    4. Squeeze in the lime juice. Add salt and pepper. Add cilantro.
    5. Blend in food processor and serve with chips.
