Dick's Insanely Hot Salsa

You can make a milder version of this by leaving out the chili peppers- maybe use one instead of 4 or 6. This is based on the Maui Tacos salsa from their cookbook, changed slightly. If you want this great salsa without the fuss, visit Maui Tacos.Ingredients: 2 TBS vegetable oil 2 cloves garlic 4-6 hot dried chili peppers (remove the seeds and stems) 1/2 Maui onion (about 1/2 cup cut into quarters) 1 small tomatillo (quartered) 2 vine ripened tomatoes (about a cup, cut into quarters) 1/2 cup water juice of 1/2 lime 1/2 tsp salt 1/8 tsp pepper 2 TBS fresh cilantro Instructions:
- In a small pan, heat the vegetable oil over medium high heat. Cook the garlic and chili peppers until the peppers turn brown. Set aside to cool.
- In another small pan, simmer the water, onion, tomatillo, and tomato for 8 – 10 minutes until softened.
- Place the chili peppers and garlic with the oil in a food processor. Add the cooled water, tomato, tomatillo, and onion.
- Squeeze in the lime juice. Add salt and pepper. Add cilantro.
- Blend in food processor and serve with chips.
