Refried Bean Soup

Ingredients: 1 can vegetarian refried beans 1 1/2 cup chicken flavor vegetable broth 2 TBS olive oil 1 clove garlic, minced 1/2 onion, diced 1 small celery stalk, diced 1/2 carrot, diced 1/4 red bell pepper, diced salt and pepper to taste 1/2 tsp cumin optional: 1 chili pepper, diced fresh cilantro for garnish Instructions:
- In a pot, heat the oil and sauté the onions, garlic, carrots, celery, and bell pepper until soft and translucent. (If you want it spicy add the chili pepper. We omitted this for Ruby's taste.)
- Add the vegetable broth, bring to a boil, reduce heat and simmer for about 10 minutes until vegetables are cooked.
- Add the can of beans, season with salt and pepper and cumin.
- Mix the beans until the soup becomes smooth. If it is too thick you can add a little water or vegetable broth.
- Top with fresh cilantro. Serve with warm corn toritillas.
