Mediterranean Potstickers

Yield: 12 servingsIngredients: 1 cup couscous (cooked) 1.5 cup collard greens (boiled, finely chopped) 1 T garlic (finely chopped) 1/4 cup onion (finely diced) 1/2 cup parsley (finely chopped) 1/4 cup mint (finely chopped) 1/4 cup greek olives (finely diced) 3/4 cup tofu feta cheese 30 pieces round oriental noodle wrappers (gyoza/potsticker type) 1/4 cup olive oil salt and pepper to taste dipping sauce: 1/4 cup fresh lemon juice 1/4 cup Bragg's Amino or low sodium soy sauce 2 T Balsamic vinegar pepper to taste In a mixing bowl combine all ingredients for filling. Fill potsticker wrappers and cover with a damp paper towel until reday to cook. Boil, fry/steam in a non-stick pan and serve with dipping sauce
