Mediterranean Potstickers

Yield: 12 servings

Ingredients:
  • 1 cup couscous (cooked)
  • 1.5 cup collard greens (boiled, finely chopped)
  • 1 T garlic (finely chopped)
  • 1/4 cup onion (finely diced)
  • 1/2 cup parsley (finely chopped)
  • 1/4 cup mint (finely chopped)
  • 1/4 cup greek olives (finely diced)
  • 3/4 cup tofu feta cheese
  • 30 pieces round oriental noodle wrappers (gyoza/potsticker type)
  • 1/4 cup olive oil
  • salt and pepper to taste
  • dipping sauce:
  • 1/4 cup fresh lemon juice
  • 1/4 cup Bragg's Amino or low sodium soy sauce
  • 2 T Balsamic vinegar
  • pepper to taste
  • In a mixing bowl combine all ingredients for filling. Fill potsticker wrappers and cover with a damp paper towel until reday to cook. Boil, fry/steam in a non-stick pan and serve with dipping sauce
