Instructions: 1/2 package Familia Brand Gnocchi (Purchase at R. Fields at Beretania Foodland) 2 TBS extra virgin olive oil 1/4 cup sun dry tomatoes, cut into thin small slices 1/4 cup Kalamata olives, pitted and sliced 2 cloves garlic, sliced thin 1 small patty Gimme Lean veggie sausage (From Down To Earth) I used about a quarter cup, formed into a small patty. Basic Tomato sauce recipeInstructions: - Cook Gnocchi per directions, in boiling water for 2 minutes. Drain.
- In a large pan, heat olive oil over medium high heat.
- Add veggie sausage and brown, then use a spatula to crumble into smaller pieces.
- Add garlic, sun dried tomatoes, and olives.
- Add the cooked Gnocchi. Mix well.
- Add 1 cup basic tomato sauce, mix well and heat through.
- Serve with Vegan parmesan alternative on top, and crushed chili pepper flakes to taste.
