Gnocchi and Tomato Sauce

Instructions:
  • 1/2 package Familia Brand Gnocchi (Purchase at R. Fields at Beretania Foodland)
  • 2 TBS extra virgin olive oil
  • 1/4 cup sun dry tomatoes, cut into thin small slices
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 cloves garlic, sliced thin
  • 1 small patty Gimme Lean veggie sausage (From Down To Earth) I used about a quarter cup, formed into a small patty.
  • Basic Tomato sauce recipe
  • Instructions:
    1. Cook Gnocchi per directions, in boiling water for 2 minutes. Drain.
    2. In a large pan, heat olive oil over medium high heat.
    3. Add veggie sausage and brown, then use a spatula to crumble into smaller pieces.
    4. Add garlic, sun dried tomatoes, and olives.
    5. Add the cooked Gnocchi. Mix well.
    6. Add 1 cup basic tomato sauce, mix well and heat through.
    7. Serve with Vegan parmesan alternative on top, and crushed chili pepper flakes to taste.
