Homemade Bean and Bacon (Veggie) Soup

This tastes like Campbell’s Bean & Bacon soup. It is easy to make and a completely vegetarian version.

Ingredients:
  • 2 TBS vegetable oil
  • 1/2 onion, diced
  • 1 large celery stalk, diced
  • 1 small carrot, diced
  • 1 small tomato, chopped
  • 2 slices Yves Brand veggie bacon strips (Freezer section of Down To Earth)
  • 2 cans Navy beans, rinsed and drained
  • 2 cups water or vegetable broth (more or less depending on how thick you want your soup)
  • 1 tsp vinegar
  • 1/2 tsp thyme or Italian seasoning
  • salt and pepper to taste
  • Instructions:
    1. Heat oil in a large pot and sauté the onion, celery, and carrot until softened. Add the tomato.
    2. Dice the veggie ham strips and add them, stirring well.
    3. Add one can of Navy beans and the water or broth.
    4. Season with salt, thyme (or Italian seasoning) and vinegar.
    5. Bring to boil, reduce heat and simmer for a few minutes.
    6. Either use a hand mixer in the pot, or place everything in batches in a blender and blend until fairly smooth. Add the remaining can of Navy beans, stir and heat through.

    Soups on. Mmm Mmm good.
