Homemade Bean and Bacon (Veggie) Soup

This tastes like Campbell’s Bean & Bacon soup. It is easy to make and a completely vegetarian version.Ingredients: 2 TBS vegetable oil 1/2 onion, diced 1 large celery stalk, diced 1 small carrot, diced 1 small tomato, chopped 2 slices Yves Brand veggie bacon strips (Freezer section of Down To Earth) 2 cans Navy beans, rinsed and drained 2 cups water or vegetable broth (more or less depending on how thick you want your soup) 1 tsp vinegar 1/2 tsp thyme or Italian seasoning salt and pepper to taste Instructions:
- Heat oil in a large pot and sauté the onion, celery, and carrot until softened. Add the tomato.
- Dice the veggie ham strips and add them, stirring well.
- Add one can of Navy beans and the water or broth.
- Season with salt, thyme (or Italian seasoning) and vinegar.
- Bring to boil, reduce heat and simmer for a few minutes.
- Either use a hand mixer in the pot, or place everything in batches in a blender and blend until fairly smooth. Add the remaining can of Navy beans, stir and heat through.
