Chinese Choy Sum

This is a delicious Chinese side dish that goes great with rice or over noodles.

Ingredients:
  • 1 large bunch choy sum, washed, drained and cut into 3 inch pieces
  • 2 TBS peanut oil
  • Sauce Ingredients:
  • 1 TBS light soy sauce
  • 1 TBS sugar
  • 1 TBS veggie oyster sauce
  • 1 tsp rice vinegar
  • chili paste to taste (about 1/ 4 tsp if you can't handle spicy)
  • 1 TBS ketchup
  • 1 tsp black bean sauce
  • 2 cloves garlic, minced
  • 1/4 cup water or broth
  • Instructions:
    Combine all ingredients and blend well in a bowl. Set aside.

    Heat the oil in a wok. Add choy sum and cook, stirring often until it begins to wilt and soften - about 2 minutes.

    Add the sauce and mix well. Add some of the water/cornstarch mixture to thicken as it comes to a boil.

    To thicken sauce:
    2 TBS corn starch
    2 TBS cold water
    mix in a bowl and set aside.

    Serve and enjoy.
