Cynthia Pratt was the winner of the Best Local Pie at the 2014 Hawaii State Farm Fair. She won $500 in cash and a $200 gift certificate to Napoleon's Bakery.
The challenge in the pie contest was to use as many local ingredients as possible.
Her winning entry was the Pineapple, Apple Banana & Liliko'i Pie with crumb topping.
The following is the recipe for the pie:
Pie Crust and Crumb Topping
2 3/4 cups all-purpose flour
1/4 cup finely crushed macadamia nuts
1 teaspoon sea salt
1/3 cup Naked Cow Dairy butter, chilled
2/3 cup solid shortening
3 to 4 tablespoons ice water
Additional flour, to dust counter top
3 tablespoons Sugar in the Raw
4 cups medium diced pineapple (1/2" diced)
2 cups medium diced apple bananas (1/2" diced)
1/2 cup Sugar in the Raw
2 local eggs, slightly beaten
2 tablespoons liliko'i juice
2 tablespoons tapioca
1/2 teaspoon sea salt
1/4 teaspoon nutmeg
Instructions for Pie Crust and Crumb Topping
Combine flour, crushed macadamia nuts and sea salt in a large mixing bowl. Cut in the chilled butter and shortening until the mixture resembles coarse crumbs. Sprinkle with ice water. Mix dough only until it sticks together. Divide dough into two parts. Shape one part into a 4" disc, wrap it loosely and refrigerate to chill. To the other half of the mixture, add the 3 tablespoons Sugar in the Raw to create a crumb topping. Refrigerate.
Dust a clean counter top lightly with flour. Dust the rolling pin. Roll the chilled disc of dough outwards from the center to create a 12" circle. Loosely roll the dough around the rolling pin and drape into a 9" pie pan. If the dough begins to split, press to seal with fingertips. Roll the excess dough onto the rim of the pan and flute/crimp the edges. Add filling. Sprinkle with crumb topping.
Instructions for Filling
In a large mixing bowl, combine the pineapple, bananas, sugar, beaten eggs, liliko'i juice, tapioca, sea salt and nutmeg. Spread into the bottom crust. Sprinkle with crumb topping.
Instructions for Baking and Serving
Bake pie in a preheated 400-degree Fahrenheit oven for 15 minutes. Reduce heat to 350-degrees Fahrenheit and continue to bake for 35 to 45 minutes, or until the topping is golden brown and the filling is set. Serve warm with whipped cream or ice cream.
