Mimi's Spicy Pickled Vegetables

Ingredients:> Pickling Juice: 1 cup low sodium soy sauce 1 cup vinegar 4 TBS sugar 3 TBS Mirin (sweet sake) Combine ingredients, making sure the sugar dissolves.Vegetables: stalks of celery chopped small onion, sliced or chopped about a cup of daikon, chopped 1 Japanese cucumber, sliced 1/2 red bell pepper sliced into bite sized pieces OPTIONAL 1 jalapeno pepper, sliced
Instructions:
Mix vegetables and pack into tupperware container. Cover with the pickling juice, seal up tight and let it sit in the fridge about 2 -3 days. Will last at least a week in the fridge.
